Now the most important fork in the method. It comes down to one thing: do you have dough boxes and enough room in the fridge, or not? Pick your path and the rest of the journey follows.

I have boxes
Shape the dough into balls of about 270 g with a scale, place them individually in the boxes, and leave them overnight.

I'll use a pot
Put the whole batch of dough into one big pot and ferment it there overnight. It takes up far less space in the fridge.
Either way, the dough ferments overnight at room temperature. In the morning you want it to have grown by about 50%% in volume (that is the next step). Boxes make the next day a little easier but cost fridge space; one big pot is the better choice when space is tight.
